Batter Your Fish, Not Your Women


Today was another frying-filled day of fun! I was asked to make fried fish again today, but this time I chose to try a beer batter instead of the breading we had used yesterday. I actually haven't battered many items in my life. I think the only times were when I made sesame chicken. In any case, it was fun to make. For the batter I beat the egg yolks in with the flour, beer, and seasonings and then later beat the egg whites to soft peaks separately before folding them into the rest of the batter. I did this with my bare hands (and a whisk)! I've never done that before! I'm a slave to my mixer and have absolutely no upper body strength so to accomplish this task in a matter of minutes really made me feel quite invincible, haha! My fish looked amazing when I pulled them out of the fryer, but unfortunately after draining for a few minutes, the crusts immediately became soggy :( It wasn't my fault though, battered fish doesn't really hold very well. I also made a spicy remoulade sauce to accompany my fish, which was later paired up with some crab and corn fritters for our plated presentations. Check out the lovely pics below!
