So a mixture of busyness and laziness has prevented me from posting pics from yesterday's class. I'm clumping two days' updates together. Yesterday I made Roasted Tomatillos. I had never worked with tomatillos before, and thought they were a lot odder than I expected. They were sticky and smelled like ass... until I washed them. Then they were a lot more tolerable. I think my dish came out pretty well except that they had to sit for a while before service and got progressively more and more soggy over time. It was expected with such a mushy vegetable. Oh well. Bell Pepper Confetti
Today I was paired up again with the fabulous Katie to make grilled pizza appetizers. I just wanna say that everyone else in the class was jealous, haha. Our pizzas were amazing. We got some pizza dough from one of the pastry classes instead of having to make our own, but it was still pretty cold and even when it warmed up we had some difficulties stretching it without it shrinking back. We decided to make two pizzas. The first had some ranch dressing, topped with mozzarella and feta cheeses, spinach sauteed in olive oil, garlic and red pepper flakes, and sun-dried tomatoes. The second had pepper jack cheese, red bell peppers, red onions, and then after it was cooked was drizzled with some green bell pepper coulis. It was so much fun to make and to eat :) I will be grilling pizzas again soon I hope!
