A Healthier Way


Today, just in time for my (and it appears everyone's) New Year's resolution to lose weight and be healthier, I started my Nutrition and Sensory Analysis class. We will be focusing on poaching and steaming techniques as our major skills, starting tomorrow. Today we discussed basic concepts about nutrition and the senses we use to taste food (all five senses). So far I really love the class. We prepared a yummy lunch consisting of Latin American flavors: baked blue corn tostadas, seared orange-cilantro chicken breasts, refried black beans, mango and chayote slaw, salsa fresca, fat free sour cream, guacamole, white and brown basmati rices, and iced tea. My group worked on the refried black beans, which were surprisingly healthy and SO delicious! I will definitely make these again. We heated up a little olive oil in a pan and sweat some finely chopped onion and minced garlic, then added 4 cans of drained black beans (reserve liquid), and a hit of chipotle chilis in adobo. We cooked the beans for a little while, smashing them up with the wooden spoon as we went along, and then added little by little some of the reserved liquid until it was a thick, but somewhat smooth, consistency. We seasoned with some salt and a dash of cumin, and then squeezed half a lime to finish it off. Perfection! Lots of people in the class complimented us on the beans, and quite frankly I really enjoyed everything we prepared! Here are a few photos...
