I know a lot of people may claim to make the world's best anything, and I generally never use that title except for when I'm really convinced. Let me tell you, I'm convinced :) This black bean and corn salsa is really delicious! I wanted to make a tasty salsa using these ingredients, but I didn't want to make a dry/chunky one like most recipes I've seen, but instead a more saucy salsa, which is more my style. It is still very chunky, filled with lots of beans and corn, but it's all bound together with a flavorful tomato-based sauce. I used canned black beans and frozen corn to make it easy, but if you wanted to be all natural (and I don't blame you), you can cook your own black beans from scratch, cook and cut fresh corn off the cob, make your own tomato sauce, etc, but I think this is perfect for when you want to whip up a batch of salsa without overexerting yourself. And trust me, when you have a craving, you don't want to overexert yourself :) Immediate gratification is what it's all about!
Black Bean and Corn Salsa
Makes about 6 cups
1-15.5 oz can black beans, drained and rinsed
1-15 oz can tomato sauce
1 1/2 cups frozen corn, thawed
1 T. chili powder
1/2 T. ground cumin
1/2 T. ground coriander
1/4 cup red wine vinegar
1 T. minced garlic
10 dashes Tabasco sauce, or to your liking
Salt to taste
Combine all the ingredients except the salt and mix thoroughly. Taste and season with salt if needed. Serve with tortilla chips.
*The canned black beans already have salt in them, so you may not require a lot of additional salt. Also keep in mind the chips you serve with the dip will most likely be salted, so do not season with a heavy hand.
